I will, Rachel! My mother also cooked asparagus, but I seldom do because of my husband’s fussy ways. But knowing I might microwave some just for me, then use it in a salad, again just for me, might be a game changer. Then I’m also going to be on the lookout for white asparagus!🤗
Our family LOVES IT!! My mom would cut up and scramble w eggs, hint onion and cheese. She called us so we'd all know. Family get together over platter !!!

I've never had hollandaise before. Mom's asparagus and eggs was something we all looked forward to. I tried making it. How hard can it be right? It never tasted like Mom's.
I also never liked asparagus growing up but now I love it. I am anxiously awaiting for them to arrive at the markets here!

It’s a grown up taste, isn’t it? I never thought I’d eat asparagus or Brussels sprouts raw, but shaved into a salad, they are sublime. ❤️
Massive yes to the raw sprouts too! I think we're too set in our ways as to what should be considered a 'salad' vegetable.
I will say I have loved brussels sprouts in all their forms before it was cool!

Enjoyed the article. I never ate asparagus till I worked in the grocery store in high school/college. I make it crisp-tender.
My grandma was a Phipps from Tennessee--there are lots of Phipps in Northeast Tennessee.
