The main reason we purchased our air fryer was to make fries! I love aioli, but most of the time we dip them in Heinz ketchup!

I always wanted a Fry Daddy…I never got one because I think I would be frying everything I could get my hands on. Best fries we ever had were in Vienna, Georgia many years ago in a place owned by Myron Mixon. We had no idea who he was at that time, we had just stopped for lunch while we were on a road trip. Those fries still haunt me, they were so good! I met Myron at a book signing a couple of years ago and asked him about the fries. He told me they were so good because they were fried in lard. Best potatoes ever.

I love reading your stories! And those potatoes sound really good. But honestly, I’m not going to do that much work. I slice up some organic Yukon Gold potatoes into rounds with the skins on and put them in a pre-heated cast iron skillet with olive oil at 425 for 30 minutes and flip then cook for 20-30 more minutes. Not true French fries, but pretty darn good oven fries.

As you pointed out, the key for making these coming out crispy on the outside and creamy on the inside is to maintain consistency in the size and thickness of the rounds as much as possible.

Yes you are correct on your entire text. The ice cold water bath before cooking makes a big difference. It removed unneeded starch &ages for a crisper FF.

McDonald's fries have not been worth eating since they went to vegetable oil. Beef tallow is truly the best fat to use or home rendered lard. However, the number of times one does make homemade French fries one might justify it. The best French Fries available to buy are found at a gas station in Arrington Tennessee. Rapid Pak. Get there early for lunch; it's busy and you can tell by the size of the people that eat there that they eat there a lot. I do make a stop on my way back from picking up chicken feed at Bonnie's Barn, College Grove. Thank you Ms. Byrn. I am a huge fan.
