I swear it is as if you could read my mind because I have been obsessed with learning to make focaccia! This past weekend I tried my hand for the first time at making a version of a focaccia/potato pan bread with cherry tomatoes from Ken Haedrich's cookbook called "The Harvest Baker". I was really impressed with the results. It rose beautifully and was soft and delicious on the inside and crusty and golden on the outside. I thought I had done something wrong because mine had some big bubbles form while it was proofing and I kept trying to pop them thinking they were not supposed to do that, but apparently, it is okay for that to happen? The particular recipe I made is baked in a 13 x 9 inch pan so it makes a lot. This recipe uses a cooked potato that you rice and then you add the riced potato along with some of the potato water to the flour & yeast mixture. Thank you both for such an interesting article and all the wonderful recipes/links and information.
Hi Debbie, that recipe sounds fantastic. Like it would keep well and stay fresh for a couple days. Potato (starch) water is fascinating how it belongs in bread baking. And yes, it’s ok to have those bubbles. A delicious chemical reaction is taking place!

I Just happened to run across a mesmerizing TikTok video of garden focaccia where the creator used focaccia dough as the canvas for various sliced veggies to create a floral scene. I don't know that I am that artistic but it looked fun -- and yours with just the tomato slices look like a work of art...perhaps that is more my speed! at any rate, thanks for the enlightenment and the testing to come up with a foolproof formula and method.
