I ate pink champagne cake for the very first time last summer, when, during a COVID lull, I stayed at the wonderfully eccentric Madonna Inn in San Luis Obispo, CA, where pink is the theme color, and this cake is the specialty. A proper celebratory cake for Valentine's Day. The crumb looks so delicate! I am a cake lover but rarely bake layer cakes now that my kids are grown. I may just make this for myself. The only dish I've ever put champage in is risotto. I might have to give it a go with pink champagne and see what happens. Thanks for the inspiration.

Your thread asks “What do you bake for Valentine’s Day?”…I always bake vanilla & chocolate cupcakes decorated with pink frosting on the vanilla cupcakes & chocolate frosting on the chocolate cupcakes. I decorate the tops simply with good ole sweetheart candies & jellied cherry hearts. If time allows,I will bake homemade sugar cookies cut out in the shape of hearts & decorate with frosting with lots of sprinkles. I love to give them to family & co- workers. However I have this book American Cake& I’m definitely gonna try to make this for my family.
Made this for my wife for Valentines. Didn't have pink food coloring handy, but she still appreciated it. We both enjoyed the interesting fruity tang that the champagne added.
