Only other thing I add to the mac and cheese beyond what you have are sautéed vadalia onions, it adds even more depth.

Agree with others, this is a frequent winter meal at our house serves with a large green salad. It refrigerates and reheats well the next few days.

I get cheese ends from a local WI dairy and so have many different versions. Some with Chipotle’s, or spicy pepper jack and even a garlic veggie version.

I think it’s a national icon but I hated it . Not until I tasted the home made variety did I succumb. But Ann, yours is the best! I’ve just made it and it is divine. Thank you and wishing you peace and kindness and tasty things!

I came to Canada in the mid 70’s unaware of the phenomenon of mac’n cheese. Packets of Kraft Dinners were a staple in everyone’s cupboard

Love love mac and cheese and it was never a part of our family Thanksgivings so I have been bringing it to Friendsgivings for years. Will definitely try this recipe this year. Love cavatappi and hope my toddler twin nephews enjoy it too:)

I never knew about the Mac and cheese phenomenon with Thanksgiving till we moved to GA. Thanks for that bit of history. My husband is a gym rat and with the kids gone, Mac and cheese have gone the way of Meatless Fridays during lent. I avoid the box mix and make my own. Your recipe sounds fab and I will add that to my to do list. Thanks!

I use colby-jack because my husband can't eat cheddar. I use dry mustard and paprika, I add them earlier in the roux. Many times I use penne. If I put crumbs on, I use buttered crushed Ritz.

Between the note about Thomas Jefferson being billed for an 80# wheel of Parmesan in 1807, the caveat to not use pre-shredded cheese, the tip to add nutmeg, and substituting Ritz crackers for panko as a crumbly topping, the ins and outs of this seemingly simple dish became more alive for me.
