Lazy Woman Pickles

12-15 pickling cucumbers
3 T. mixed pickling spices
2 T. alum
4 T. plain salt
4 cups cider vinegar
4 cups sugar
Wash well a 1 gallon glass or plastic jar with a lid. Stuff cucumbers into the jar. Cram as many in the jar as you can. Pour the vinegar and spice mixture over the cucumbers. Finish filling the jar with water. Shake well. Tape lid tightly and label with date. Let set in cool place (a basement is perfect for this) for two months. After the two months, pour off the liquid and discard it. Wash and brush the cucumbers. If necessary, scrape them to remove any scum that might be on the pickles. Slice the pickles in hunks or thick slices. Put back into the jar and top with sugar. Mix well. Do not add any additional liquid. Pickles will make it on their own. Let jar stand outside for 2-4 days until sugar melts. Then refrigerate. After cooling, the pickles are ready to eat or divide and refrigerate them in smaller jars.
Note: Despite the chauvinistic title, these are fabulous pickles and very little trouble to make. If you are worried about forgetting the 2 month mark, just put a note on your calendar. Makes a thoughtful hostess gift!
Anne, the pickle is another recipe my MIL shared with me too! However, my favorite pickle - hands down - is a chauvenistically named one "Lazy Woman Pickles" that my daddy shared with me. Can I post it here or send it to you?
There appears to be liquid in the pickle jars in your photo. If you drain the pickles in your first step, don't you lose all the vinegar and then have only sugar and spices for the pickles to soak in? Do we need to add any liquid?
Have you tried Asian style pickles with soy sauce? Such an interesting flavor.
These are absolutely the best pickles. My husband doesn’t like sweet pickles so these are all mine! Thank you Anne.
