My Gram never used hash browns. She made Potato Hash. I was going to share week you spoke of Hamburger Helper.
She cut up potatoes to a cast iron skillet. 2 tbs. butter and a heaping tbs lard. Yes. Lard. As the potatoes cooked she cut an onion directly to skillet. Bit more butter. When onions looked as if disappeared, she put a handful ground beef in. Grease from meat would see everything done. She always had ground beef wrapped big for meat loaf. Medium for spaghetti sauce or chilli and handfuls to flavor whatever.
As it all finished cooking she added a dusting of flour and cream .
It was my favorite dish that she made. As i grew older and married she knew when I needed a bowl.. I tried several times to make myself. It doesn't come close to hers.
I have made what my kids called “cheesy potatoes” for Easter for many years. My husband doesn’t like them because of the sour cream and cream of chicken soup, so I switched to a recipe from Food Network called “All Crust Sheet Pan Scalloped Potatoes”. Delicious but a lot more work! I’m anxious to try your recipe for Funeral Potatoes (nothing there that he should have an issue with).
I make the recipe with canned soup and everyone loves it. I usually use Simply Potatoes, but noticed recently they they use "bioengineered" potatoes. I know that they say that is safe, but I'm going to try and stay away from convenience foods - even the canned soup.
Unbelievably, I just pulled my personal cookbook to check ingredients for the Almighty hash brown casserole. Having with burgers and hotdogs next weekend to celebrate husband’s 70th birthday. Crackle Barrel recipe! Planning to add the Parmesan.
In my 40+ years on earth, I never thought of using frozen potatoes as a shortcut. Amazing. The cream is where it's at. I'm not big on garlic, so I just rubbed a clove on the pan to give it just a whisper of garlic flavor, along with some fresh rosemary. Thank you for sharing this!

I live in Utah but am non-Mormon. But will try this recipe today! Looks yummy.
